Making Batch 007

Found North Batch 007 Shipping Out Soon

For all of you James Bond fans out there, we’re excited to announce that Batch 007 is headed to retailers this month with a bullet. Sadly, we don’t have any other spy-related puns or innuendos with this latest release. That being said, we’re glad to report that the time we could have spent creating a Bond 007-related marketing plan was dedicated entirely to creating a stellar Canadian whisky blend instead.

Let’s get into the specifics!

Batch 007 was built around an enticing new whisky that we have never used before: a 1998 corn component matured in ex-Bourbon that clocked in at 24 years and 9 months of age. Because it was aged in a first-fill, ex-Bourbon cask rather than new wood, the fruit and floral characteristics were off the charts and the body of the whisky was captivating. We knew we wanted to structure Batch 007 around this whisky.

When we build around a whisky at Found North, it doesn’t mean that whisky will ultimately be the highest-percentage whisky in the final blend. It’s just easier to take a whisky that you really like and then figure out a way to accent its alluring attributes. We like having a starting point and we like to use a whisky that tastes great on its own. To bolster that anchor, we added in two additional corn components distilled in 2000: one aged in ex-Bourbon and the other in new wood. Blending these three whiskies together created richness and weight, and from there it was just about balancing the rye. 

The rye component of Batch 007 is an 18 year, 11 month old specimen aged in Hungarian oak. As you might have guessed, we were tempted to let it age another month, especially since it would have raised Batch 007 to a 19 year age statement. However, we were so happy about how it tasted that we didn’t want to risk it. Plus, we trust our audience to know that a whopping 84% of Batch 007 is 22-24 years old, making the age statement somewhat irrelevant.

For those of you who enjoyed Batch 002, we’re happy to report that “Sample 18” (we call it that because it was the 18th sample we ever received) is also a key component in batch 007. As a 22 year old corn whisky aged 13 years in ex-Bourbon and then transferred to new oak for the rest of its maturation, it is both rich and robust and was also the foundation of Batch 002. Having transitioned to a supporting role for Batch 007, Sample 18 has once again found a way to integrate beautifully with its co-whiskies. 

Batch 007 was bottled at 65.9% ABV. Because the rye component was aged in Hungarian Oak and it’s the dominant note in the whisky, we featured that on the label as well. MSRP for Batch 007 will be $159.99. We are releasing it to the general market this month, as well as the Found North website starting June 21st.
