When we started Found North we created “Batches” because we wanted a very open ended approach to making whisky. We never set out to make a very specific whisky-type, age or style and then repeat it. Batches as an open-ended category allowed us to follow our instincts and see where the flavors took us.

In fact, our first Batch was a rye-dominant whisky, something we were very keen to make. It was Batch 002 that changed the course of Found North. It was our first corn-dominant blend and it opened our eyes and palates to the potential of Canadian whisky in a wholly different direction than we ever expected.

Over the years, our Batches have become less about diversifying the grain ratio and more about exploring the possibilities of double oaking our components into a wider variety of Virgin oak. With longer runway to make our whiskies we have been exploring New Hungarian Oak, New Spanish Oak, New French Oak and a myriad of air-seasoning, toasting and charring regimens from the best American coopers.
